CHICKEN FAJITA CASSEROLE RECIPE

Ingredients:

  • 2 boneless, skinless chicken breasts, cut into thin strips
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 tablespoon olive oil
  • 1 packet of fajita seasoning mix
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 cup salsa
  • 6-8 small flour tortillas

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the sliced chicken and cook until it’s no longer pink and cooked through.
  3. Remove the chicken from the skillet and set it aside. In the same skillet, add a bit more olive oil if needed, and sauté the sliced onions and bell peppers until they are soft and slightly caramelized.
  4. Return the cooked chicken to the skillet and sprinkle the fajita seasoning mix over the chicken and vegetables. Stir well to coat everything evenly with the seasoning.
  5. In a separate bowl, mix together the sour cream and salsa.
  6. Spread a thin layer of the sour cream and salsa mixture in the bottom of a casserole dish.
  7. Tear the flour tortillas into bite-sized pieces and layer half of them on top of the sour cream and salsa mixture in the casserole dish.
  8. Spoon half of the chicken and vegetable mixture on top of the tortilla pieces.
  9. Sprinkle half of the shredded cheese over the chicken and vegetables.
  10. Repeat the layers with the remaining tortillas, chicken and vegetable mixture, and shredded cheese.
  11. Cover the casserole dish with foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  12. Remove the foil and bake for an additional 5 minutes to lightly brown the cheese on top.
  13. Once done, let it cool for a few minutes before serving. Enjoy your delicious chicken fajita casserole!
