Jalapeno popper chicken with roasted chili lime cauliflower

Ingredients for 2 portions:

2 Chicken breast

4oz Cream Cheese

1-2 Jalapenos

3 slices of Bacon

Shredded Sharp Cheddar

1 head of Cauliflower

Trader Joe’s Chili-lime seasoning

Garlic powder

Paprika

Olive Oil

Lime (optional)

Cilantro (optional)

Directions for Chicken:

  1. Preheat oven to 375F

  2. Fry some bacon. You want it floppy because it will cook more later

  3. Dice up some jalapenos, as many as you would like. Add to about 4oz of cream cheese. Then add chopped up cooked bacon and mix together.

  4. Butterfly chicken breasts and rub down both sides with bacon grease, paprika, and garlic powder. You can use oil instead if you want.

  5. Place chicken on foil lined sheet pan and scoop on cream cheese mixture. Top with cheddar cheese. I leave these open faced instead of folding over so the chicken cooks more evenly and stays juicy.

  6. Put pan in oven and cook for around 25 minutes.

  7. Squeeze some lime juice on top and add some cilantro to finish

Directions for Cauliflower:

  1. Preheat oven to 375

  2. Cut up cauliflower so the florets are somewhat uniform in size

  3. In a big bowl, add olive oil, garlic powder, and chili-lime seasoning. Toss. You want all the cauliflower to visibly have the seasoning on it.

  4. Spread onto sheet pan and bake in the oven for about 30 minutes, flip half way through. You can cook these at 400-425 for less time, but I cooked them while cooking the chicken.

  5. Squeeze some lime juice on top to finish them (this adds so much, do it)
