Ingredients:

  • 1 medium head of broccoli (about 7 oz or 210g), chopped into florets
  • 2 oz (60g) baby spinach
  • 6 eggs, beaten
  • 4 oz (120g) mozzarella cheese, grated
  • 1 garlic clove, grated
  • Sea salt, to taste

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a 9-inch pie pan.
  2. In a mixing bowl, beat the eggs thoroughly. Then, add 100g of grated mozzarella cheese, grated garlic, baby spinach, and a pinch of sea salt. Mix well to combine.
  3. Arrange the chopped broccoli florets evenly in the greased pie pan.
  4. Pour the egg mixture over the broccoli, ensuring it covers the broccoli evenly.
  5. Sprinkle the remaining 20g of grated mozzarella cheese over the top of the egg mixture.
  6. Place the pie pan in the preheated oven and bake for about 30 minutes, or until the pie is set and the top is golden brown.
  7. Once baked, remove the pie from the oven and allow it to cool slightly.
  8. Season with additional sea salt, if desired, and serve warm.
