Keto Cheese Muffins:

Ingredients:

  • 1/2 cup shredded Cheddar cheese
  • 1/4 cup Mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 3 large eggs
  • 1/2 cup Heavy cream
  • 1/2 cup Almond flour
  • 5 tablespoons Unsalted butter
  • 1 teaspoon Baking powder

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the shredded Cheddar cheese, Mozzarella cheese, and Parmesan cheese.
  3. In a separate bowl, whisk together the eggs and heavy cream until well combined.
  4. Melt the unsalted butter and add it to the egg and cream mixture.
  5. Add the almond flour and baking powder to the wet ingredients and mix until smooth.
  6. Gradually incorporate the cheese mixture into the batter, stirring until well combined.
  7. Line a muffin tin with paper liners or grease it with butter or cooking spray.
  8. Pour the batter into the muffin tin, filling each cup about 3/4 full.
  9. Bake in the preheated oven for 12 to 15 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool slightly before removing them from the muffin tin.
