Keto Chicken and Cauliflower Rice Recipe:
Ingredients:
- 2 boneless, skinless chicken breasts, diced
- 1 medium head of cauliflower, grated or riced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 bell pepper, diced
- 1 cup broccoli florets, chopped
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1/4 cup chicken broth
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)

Instructions:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken breasts and season with salt, pepper, paprika, and cumin. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic, diced onion, diced bell pepper, and chopped broccoli. Sauté until the vegetables are tender, about 5-6 minutes.
- Add the grated cauliflower rice to the skillet with the vegetables. Stir well to combine.
- Pour the chicken broth and lemon juice over the cauliflower rice mixture. Stir again, scraping up any browned bits from the bottom of the skillet.
- Return the cooked chicken to the skillet, mixing it with the cauliflower rice and vegetables. Cook for an additional 2-3 minutes to heat everything through.
- Taste and adjust seasoning with salt and pepper if needed.
- Once everything is heated through and well combined, remove the skillet from the heat.
- Garnish with freshly chopped parsley before serving.
