Keto Chicken Enchiladas

Ingredients:

For the Filling:
  • 2 cups cooked shredded chicken
  • 1/2 cup diced onion
  • 1/2 cup diced bell peppers (any color)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Optional: diced jalapeños for extra heat
For the Sauce:
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1/4 cup chopped green chilies
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
Other:
  • 6 low-carb tortillas

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a baking dish with non-stick cooking spray.
  2. Prepare the Filling:
