Keto Chocolate Chip Cookies:

Ingredients:

  • 2 large eggs
  • 1/2 cup (1 stick) melted butter
  • 2 tablespoons heavy cream
  • 2 teaspoons pure vanilla extract
  • 2 3/4 cups almond flour
  • 1/4 teaspoon kosher salt
  • 1/4 cup keto-friendly granulated sugar (such as Swerve)
  • 3/4 cup dark chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together the eggs, melted butter, heavy cream, and vanilla extract until well combined.
  3. Stir in the almond flour, salt, and keto-friendly granulated sugar (such as Swerve) until a dough forms.
  4. Fold the dark chocolate chips into the cookie batter until evenly distributed.
  5. Using a spoon or cookie scoop, form the dough into 1-inch balls and place them 3 inches apart on the prepared baking sheets.
  6. Lightly grease the bottom of a glass with cooking spray, then use it to flatten the dough balls into disks.
  7. Bake in the preheated oven for 17 to 19 minutes, or until the cookies are golden brown.
