Keto Cinnamon Coffee Cake

Ingredients

For the Cake:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup erythritol or preferred keto-friendly sweetener
  • 1/4 cup unsweetened almond milk
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

For the Cinnamon Swirl:

  • 1/4 cup erythritol or preferred keto-friendly sweetener
  • 2 tbsp unsalted butter, melted
  • 2 tsp ground cinnamon

For the Crumb Topping:

  • 1/2 cup almond flour
  • 1/4 cup erythritol or preferred keto-friendly sweetener
  • 1/4 cup unsalted butter, melted
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
  2. Prepare the Cake Batter:
    • In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt.
    • In another bowl, whisk together the eggs, melted butter, almond milk, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and mix until well combined.
  3. Prepare the Cinnamon Swirl:
    • In a small bowl, mix together the erythritol, melted butter, and cinnamon until it forms a smooth paste.
  4. Assemble the Cake:
    • Pour half of the cake batter into the prepared baking dish and spread it evenly.
    • Spoon the cinnamon swirl mixture over the batter and spread it out.
    • Pour the remaining cake batter over the cinnamon swirl layer and spread it evenly.
  5. Prepare the Crumb Topping:
    • In a small bowl, mix together almond flour, erythritol, melted butter, and cinnamon until crumbly.
    • Sprinkle the crumb topping evenly over the cake batter.
  6. Bake the Cake:
    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cake cool in the pan before slicing and serving.
