Coconut Lemon Fat Bombs and Mint Chocolate Cups:

Ingredients:

  • 200 grams coconut butter
  • 1/4 cup coconut oil
  • 2 tablespoons powdered Swerve

For Lemon Coconut:

  • 1 teaspoon lemon juice
  • 1/4 cup unsweetened coconut flakes

For Chocolate Mint:

  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon mint extract

Instructions:

  1. In a microwave-safe bowl, combine the coconut butter, coconut oil, and powdered Swerve. Melt together in the microwave until smooth.
  2. For the Lemon Coconut flavor, stir in 1 teaspoon of lemon juice until well combined.
  3. For the Chocolate Mint flavor, add 1/4 cup of unsweetened cocoa powder to the melted mixture, then stir in 1 teaspoon of mint extract until thoroughly incorporated.
  4. Line a muffin tin or silicone molds with parchment paper or cupcake liners.
  5. Pour the flavored coconut mixture into the prepared molds, dividing it evenly.
  6. For the Lemon Coconut fat bombs, sprinkle unsweetened coconut flakes on top of each mold.
  7. Place the filled molds in the freezer and chill until solid, about 1-2 hours.
  8. Once set, remove the fat bombs and chocolate cups from the molds.
  9. Store them in an airtight container in the refrigerator or freezer until ready to enjoy
