Ingredients:

For the Choux Pastry:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup almond flour
  • 4 large eggs

For the Filling:

  • 1 cup heavy cream
  • 2 tablespoons powdered erythritol (or preferred keto-friendly sweetener)
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Choux Pastry:
    • Preheat your oven to 400°F (200°C).
    • In a medium saucepan, bring water, butter, and salt to a boil over medium-high heat.
    • Reduce the heat to low and add almond flour all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
    • Remove from heat and let it cool for a couple of minutes.
    • Add eggs, one at a time, stirring well after each addition until the dough is smooth and glossy.
  2. Shape and Bake:
    • Line a baking sheet with parchment paper.
    • Transfer the dough into a piping bag fitted with a round tip (or simply use a spoon to drop small mounds onto the baking sheet).
    • Pipe or spoon small rounds (about 1.5 inches in diameter) onto the prepared baking sheet, leaving space between them.
    • Bake in the preheated oven for 20-25 minutes, or until puffed and golden brown. Avoid opening the oven door during baking to prevent them from deflating.
    • Once done, remove from oven and let cool on a wire rack.
  3. Prepare the Filling:
    • In a medium bowl, whip the heavy cream with powdered erythritol and vanilla extract until stiff peaks form.
  4. Assemble the Cream Puffs:
    • Once the choux pastry puffs have cooled completely, slice off the top third of each puff.
    • Fill each puff with a generous amount of whipped cream using a spoon or piping bag.
    • Replace the top of each puff.
    • Optionally, dust the tops with powdered erythritol for decoration.
  5. Serve:
    • Serve immediately or refrigerate until ready to serve.
