Keto Friendly Low Carb Cucumber Sandwiches

Low carb, Keto friendly and delicious.

Ingredients

3 lg cucumbers, peeled

6 slice deli turkey meat

6 slice Swiss cheese

1 lg tomato

2 Tbsp mayonnaise

1 Tbsp Dijon mustardDirections

1. Cut the peeled cucumbers in half. Then cut each half in half again lengthwise. With a spoon scrape out the seeds.

2. Mix the mayonnaise and mustard together.

3. Cut the tomato in half and slice each half into 6 slices (so you have a total of 12 slices).

 

4. Take one cucumber and add the spread with mustard mixture.

 

5. Top with one slice of turkey, cheese, and 2 slices tomato.

6. Spread more mustard mixture on another cucumber and place on top. Continue until all ingredients are used. You will have 6 sandwiches.
