Here’s a detailed recipe for a keto Frozen Snickers Cheesecake:

Ingredients:

For the Crust:

  • 1 cup almond flour
  • 2 tablespoons cocoa powder
  • 2 tablespoons powdered erythritol (or any keto-friendly sweetener)
  • 4 tablespoons melted butter

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1/2 cup powdered erythritol (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 1/4 cup unsweetened peanut butter
  • 1/4 cup chopped sugar-free chocolate or chocolate chips
  • 1/4 cup chopped peanuts

For the Topping:

  • Sugar-free caramel sauce (optional)
  • Additional chopped peanuts (optional)

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a mixing bowl, combine almond flour, cocoa powder, powdered erythritol, and melted butter. Mix until well combined.
    • Press the mixture into the bottom of a lined 8-inch springform pan.
    • Bake the crust for 10 minutes, then remove from the oven and let it cool completely.
  2. Make the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
    • Add powdered erythritol and vanilla extract to the cream cheese, and mix until well combined.
