Ingredients:

For the crust:

  • 2 cups almond flour
  • 1/3 cup Lakanto Golden Monkfruit Sweetener
  • 6 tbsp melted butter
  • 1 tsp vanilla extract

For the lemon filling:

  • 2/3 cup Lakanto Powdered Monkfruit Sweetener
  • 2/3 cup fresh squeezed lemon juice
  • 1/4 cup powdered erythritol
  • 10 tbsp melted butter
  • 8 egg yolks
  • 1/2 tsp xanthan gum
  • Zest of two lemons

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Make the crust:
    • In a bowl, combine almond flour, Lakanto Golden Monkfruit Sweetener, melted butter, and vanilla extract.
    • Mix until the ingredients form a crumbly dough.
    • Press the dough into the bottom of a 9×13-inch cake pan, creating an even crust.
    • Bake for approximately 10 minutes or until the crust turns a light golden brown.
    • Remove from the oven and let it cool.
  3. Prepare the lemon filling:
    • In a high-speed blender, combine Lakanto Powdered Monkfruit Sweetener, fresh lemon juice, powdered erythritol, melted butter, egg yolks, xanthan gum, and lemon zest.
    • Blend the ingredients until well combined.
  4. Cook the lemon filling:
    • Pour the mixture into a saucepan and place it over low heat.
    • Stir/whisk continuously for about 5 minutes before adding the xanthan gum slowly until it’s all incorporated.
    • Continue to stir until the mixture is heated through and begins to thicken.
  5. Assemble and bake:
    • Strain the lemon mixture through a sieve as you pour it over the cooled crust, ensuring an even spread.
    • Bake for 15–20 minutes at 350°F or until the lemon mixture is well set and cooked through.
  6. Finish and serve:
    • Remove from the oven and sprinkle with powdered erythritol.
    • Allow it to cool before slicing into squares.
    • Serve and enjoy these delicious keto lemon bars!
