Ingredients:

  • 6 oz. Chorizo
  • 4 strips of bacon
  • 1 large eggplant
  • 2 jalapeno peppers
  • 2 medium tomatoes
  • 2 garlic cloves
  • 8 oz. Mushrooms
  • 1/2 onion
  • 1 tbsp avocado/olive oil or lard
  • 1 tbsp Himalayan salt

Process:

  1. Begin by peeling the eggplant and cutting it into medium-sized squares.
  2. Chop the onions, mushrooms, tomatoes, jalapeno peppers, garlic, and bacon into squares or pieces (size doesn’t matter).
  3. Heat a skillet or pan over medium heat and cook the bacon and chorizo with a tablespoon of oil or lard for 3 to 5 minutes, until they start to release their flavors.
  4. Add all the other ingredients to the skillet or pan and cook for about 10 to 15 minutes, stirring constantly to ensure even cooking and to prevent burning. Cook until the eggplant is soft and fully cooked.
  5. Turn off the heat and let the mixture stand for about 5 minutes to cool slightly.
  6. Transfer all the cooked ingredients to a blender. Be sure not to add any water or liquids.
  7. Blend everything until smooth. The mixture should have a thick, bean-like consistency.
  8. In the same skillet or pan, add a bit more oil or lard to warm it up.
