keto no bake chocolate eclair recipe

Ingredients:

For the Eclair Base:

  • 1 cup almond flour
  • 1/4 cup powdered erythritol (or preferred keto-friendly sweetener)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup almond butter (or any nut butter of choice)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Filling:

  • 1 cup heavy cream
  • 2 tablespoons powdered erythritol (adjust to taste)
  • 1 teaspoon vanilla extract

For the Chocolate Glaze:

  • 1/4 cup sugar-free chocolate chips
  • 1 tablespoon coconut oil

Instructions:

  1. Make the Eclair Base:
    • In a mixing bowl, combine almond flour, powdered erythritol, cocoa powder, almond butter, melted coconut oil, vanilla extract, and a pinch of salt. Mix until well combined and a dough forms.
    • Divide the dough into 8 equal portions and shape each into an eclair shape (elongated logs). Place them on a parchment-lined baking sheet or plate. Place in the freezer to set while you prepare the filling and glaze.
  2. Prepare the Filling:
    • In a mixing bowl, whip the heavy cream with powdered erythritol and vanilla extract until stiff peaks form. Transfer to a piping bag fitted with a small round tip (or simply use a plastic bag with a corner snipped off).
  3. Assemble the Eclairs:
    • Remove the eclair bases from the freezer. Using a knife or small spatula, carefully slice each eclair horizontally along one side to create a pocket.
    • Pipe the whipped cream filling into each eclair.
  4. Make the Chocolate Glaze:
    • In a microwave-safe bowl, combine the sugar-free chocolate chips and coconut oil. Microwave in 20-30 second intervals, stirring in between, until melted and smooth.
  5. Glaze the Eclairs:
    • Dip the top of each filled eclair into the chocolate glaze or drizzle the glaze over the top using a spoon. You can also spread the glaze over the top with a knife.
  6. Chill and Serve:
    • Place the assembled eclairs in the refrigerator to set for at least 30 minutes before serving.
