Keto Peach Cobbler Chaffle Recipe:

Ingredients:

For Keto Vanilla Ice Cream:

  • 1/2 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 4 tbsp sweetener (such as erythritol or monk fruit)
  • 2 tbsp peach juice (optional)

For Peach Cobbler Chaffle:

  • 2 oz softened cream cheese, whipped
  • 1 tsp vanilla extract
  • 2 tbsp Swerve brown sugar
  • 2 tbsp sweetener
  • 1 egg
  • 2 tbsp coconut flour or almond flour
  • 4 sliced peaches, chopped

Instructions:

  1. Keto Vanilla Ice Cream:
    • In a mason jar, combine heavy whipping cream, vanilla extract, sweetener, and optional peach juice.
    • Shake the jar vigorously for 1-2 minutes until the ingredients are well combined.
    • Freeze the mixture for 30 minutes until it reaches a semi-solid consistency.
    • This recipe yields 2 servings of keto vanilla ice cream.
  2. Peach Cobbler Chaffle:
    • In a mixing bowl, whip the softened cream cheese until smooth.
    • Add vanilla extract, Swerve brown sugar, sweetener, and egg to the bowl. Mix until fully incorporated.
    • Gradually add coconut flour or almond flour to the mixture, stirring until a batter forms.
    • Gently fold in the chopped peaches until evenly distributed throughout the batter.
    • Preheat your mini waffle maker and lightly grease it with cooking spray.
