Instructions:
- In a medium mixing bowl, combine almond flour, melted butter, Swerve, and peanut butter. Mix until well combined. I recommend using the icing version of Swerve for better mixing. Spread this mixture evenly into a small pan (approximately 7” x 5”) lined with parchment paper or sprayed with cooking spray for easier removal later. Set aside.
- While the peanut butter mixture sets, melt the chocolate chips in a heatproof bowl in the microwave in 30-second increments until fully melted. Stir after each heating until smooth.
- Pour the melted chocolate over the top of the peanut butter mixture in the pan, ensuring it covers the entire surface evenly. Place the pan in the fridge and allow it to chill until the chocolate hardens, approximately 2 hours.
- Once the bars have set, remove them from the fridge and let them come to room temperature for about 20 minutes. This step will make it easier to cut through the chocolate without shattering it.
- Carefully turn out the bars onto a cutting board, ensuring the peanut butter side is facing up. Using a sharp knife, cut the bars into 12 squares.
- Store the peanut butter chocolate squares in the refrigerator to maintain their shape and freshness.
