Keto Peanut Butter Cups

Ingredients:

  • 1/3 cup peanut powder
  • 1/2 cup peanut butter
  • 1/3 cup sweetener (such as erythritol or stevia)
  • 1 tsp vanilla extract
  • 1 bar (about 3.5 oz) sugar-free chocolate
  • 1-2 tsp heavy cream

Instructions:

  1. Prepare the Peanut Butter Filling:
    • In a bowl, combine peanut powder, peanut butter, sweetener, and vanilla extract. Mix until smooth and well combined.
  2. Shape the Filling:
    • Form the peanut butter mixture into small balls and then flatten each ball into a disk, approximately 3/8 inch thick. These will be the centers of your peanut butter cups.
  3. Melt the Chocolate:
    • Break up the sugar-free chocolate bar into pieces and place them in a glass bowl.
    • Add 1 teaspoon of heavy cream to the chocolate.
    • Microwave the chocolate in 15-second intervals, stirring each time, until melted and smooth. Be cautious not to overheat the chocolate.
  4. Assemble the Peanut Butter Cups:
    • Line a muffin tin with silicone liners.
    • Spoon about a tablespoon of melted chocolate into each liner. Rotate the liner to spread the chocolate partially up the sides.
  5. Add the Peanut Butter Filling:
    • Place one flattened peanut butter disk in the center of each muffin cup, on top of the melted chocolate.
  6. Cover with Chocolate:
    • Spoon 1-2 teaspoons of melted chocolate over each peanut butter disk, ensuring the entire disk is covered and sealed with chocolate.
  7. Chill the Peanut Butter Cups:
    • Refrigerate the peanut butter cups overnight, or place them in the freezer for a few hours, until firm and set.
  8. Serve and Store:
    • Once set, remove the peanut butter cups from the muffin tin and store them in the refrigerator to prevent melting.
