Keto Peanut Butter No-Bake Cookies:
Ingredients:
- 1 stick of butter
- 1/2 cup cocoa powder
- 1/2 cup Swerve confectioner sugar (or any low-carb sweetener)
- 1 tsp vanilla extract
- 1 cup peanut butter
- 1 cup pecans
- 1 cup unsweetened coconut flakes (optional, omit if desired)

Instructions:
- Melt one stick of butter in a microwave-safe bowl.
- Once melted, add 1/2 cup of cocoa powder, 1/2 cup of Swerve confectioner sugar, 1 teaspoon of vanilla extract, and 1 cup of peanut butter to the melted butter. Mix all ingredients until well combined.
- Optionally, add 1 cup of pecans and 1 cup of unsweetened coconut flakes to the mixture. Stir until everything is evenly distributed and you get a good consistency.
- Line a baking sheet with parchment paper.
- Drop spoonfuls of the mixture onto the parchment paper, forming cookies.
- Place the baking sheet in the freezer for 10 to 15 minutes to allow the cookies to set.
