Keto Peanut Butter No-Bake Cookies:

Ingredients:

  • 1 stick of butter
  • 1/2 cup cocoa powder
  • 1/2 cup Swerve confectioner sugar (or any low-carb sweetener)
  • 1 tsp vanilla extract
  • 1 cup peanut butter
  • 1 cup pecans
  • 1 cup unsweetened coconut flakes (optional, omit if desired)

Instructions:

  1. Melt one stick of butter in a microwave-safe bowl.
  2. Once melted, add 1/2 cup of cocoa powder, 1/2 cup of Swerve confectioner sugar, 1 teaspoon of vanilla extract, and 1 cup of peanut butter to the melted butter. Mix all ingredients until well combined.
  3. Optionally, add 1 cup of pecans and 1 cup of unsweetened coconut flakes to the mixture. Stir until everything is evenly distributed and you get a good consistency.
  4. Line a baking sheet with parchment paper.
  5. Drop spoonfuls of the mixture onto the parchment paper, forming cookies.
  6. Place the baking sheet in the freezer for 10 to 15 minutes to allow the cookies to set.
  7. Once set, transfer the cookies to an airtight container or Tupperware and refrigerate.
  8. Enjoy these delicious keto peanut butter no-bake cookies as a satisfying and guilt-free treat!
