Keto Pumpkin Cookies
Ingredients:
- 1 & 1/2 cups almond flour
- 1/4 cup sweetener (such as Lakanto)
- 1/3 cup pumpkin purée
- 1/4 cup chopped pecans
- 1/4 cup Lily’s pumpkin spice chips
- Pumpkin spice (for sprinkling, optional)

Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour and sweetener. Mix well.
- Add the pumpkin purée to the dry ingredients and mix until thoroughly combined.
- Stir in the chopped pecans and Lily’s pumpkin spice chips until evenly distributed throughout the dough.
- Use a cookie scoop to portion out the dough and place them onto the prepared baking sheet. Flatten each cookie to about 1/2 inch thick.
