Keto Pumpkin Cookies

Ingredients:

  • 1 & 1/2 cups almond flour
  • 1/4 cup sweetener (such as Lakanto)
  • 1/3 cup pumpkin purée
  • 1/4 cup chopped pecans
  • 1/4 cup Lily’s pumpkin spice chips
  • Pumpkin spice (for sprinkling, optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour and sweetener. Mix well.
  3. Add the pumpkin purée to the dry ingredients and mix until thoroughly combined.
  4. Stir in the chopped pecans and Lily’s pumpkin spice chips until evenly distributed throughout the dough.
  5. Use a cookie scoop to portion out the dough and place them onto the prepared baking sheet. Flatten each cookie to about 1/2 inch thick.
  6. Optional: Sprinkle the cookies with pumpkin spice for an extra burst of flavor.
  7. Bake in the preheated oven for 15-17 minutes, or until the cookies are set and lightly golden around the edges.
  8. Remove the cookies from the oven and allow them to cool completely on the baking sheet.
  9. Once cooled, transfer the cookies to a wire rack to cool completely.
