Ingredients:

Quesadilla Sauce:

  • 1/4 cup Duke’s Mayo
  • 3/4 tsp Monkfruit (or any keto-friendly sweetener)
  • 1/2 tsp Cumin
  • 1/2 tsp Paprika
  • 1/8 tsp Cayenne
  • 1/8 tsp Garlic Powder
  • Salt and Pepper to taste

Steak:

  • 1 box of Steak Um
  • 1/2 packet of Taco Seasoning

Quesadilla Assembly:

  • Shredded cheese (keto-friendly)
  • Low-carb tortillas (such as Mission)
  • Butter (for frying)

Instructions:

1. Prepare the Quesadilla Sauce:

  • In a bowl, combine Duke’s Mayo, Monkfruit, cumin, paprika, cayenne, garlic powder, salt, and pepper. Mix well until all ingredients are thoroughly incorporated. Set aside.

2. Cook the Steak:

  • Heat a skillet over medium heat. Add the Steak Um to the skillet and sprinkle with taco seasoning.
  • Cook the Steak Um, chopping it into smaller pieces as it cooks until it’s browned and cooked through. Set aside.

3. Quesadilla Assembly:

  • Heat a skillet or electric skillet over medium heat. Place a layer of shredded cheese in the skillet.
  • Lay a low-carb tortilla on top of the cheese and allow the cheese to melt and brown slightly on the bottom side of the tortilla. Then, flip the tortilla over.
  • Spread a portion of the prepared quesadilla sauce over the tortilla.
  • Add the cooked steak on top of the sauce.
  • Sprinkle another layer of shredded cheese over the steak.
  • Spread a bit more of the quesadilla sauce over a second tortilla and place it sauce-side down on top of the cheese layer to form a quesadilla.

4. Cook the Quesadilla:

  • If using a skillet, add a little butter to the skillet before placing the quesadilla in it. Cook the quesadilla until both sides are golden brown and the cheese is melted.
  • If using an air fryer, preheat it to 400°F (200°C). Cook the quesadilla in the air fryer for about 8 minutes, flipping it halfway through the cooking time.

5. Serve:

  • Once the quesadilla is cooked to your liking, remove it from the skillet or air fryer.
  • Allow it to cool for a minute or two, then slice it into wedges.
