Keto Super-Quick Healthy Chicken Stir Fry

 

Ingredients:

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil or avocado oil
  • 2 cloves garlic, minced
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 2 tablespoons soy sauce or tamari (for gluten-free)
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Optional: chili flakes for heat, sesame seeds for garnish

Instructions:

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat.
  2. Add the chicken slices and cook until golden brown and cooked through, about 5-6 minutes. Remove from skillet and set aside.
  3. In the same skillet, add the remaining oil. Stir in garlic and cook for about 30 seconds until fragrant.
  4. Add bell pepper, broccoli, and mushrooms. Cook, stirring frequently, until vegetables are tender yet still crisp, about 4-5 minutes.
  5. Return the cooked chicken to the skillet. Pour in soy sauce and sesame oil. Stir well to combine and coat everything evenly.
  6. Cook for an additional 2-3 minutes until everything is heated through.
  7. Season with salt, pepper, and optional chili flakes according to taste.
  8. Garnish with sesame seeds if desired.
  9. Serve hot and enjoy!
