Spicy keto tortilla beef lasagne

This is not only the best keto meal I’ve ever had, I also think it’s one of the best, tastiest meals I have ever cooked. Going to be a weekly staple for me.Lasagna rocks. That enticing flavor mash-up of creamy cheese, hearty tomato sauce, and seasoned ground beef… not to mention garlic and onions. Wait no longer. This keto version is the ultimate comfort food

Ingredients:

-1kg beef mince

-Tablespoon minced garlic

-1 brown onion

-2/3 jars of chunky salsa (whatever heat level)

-500-600 grams mozzarella cheese (shredded)

-3 low carb wraps (in Australia, I use the empower wraps, at 3 gram carbs per wrap

-Sour cream

-Taco mix

-Seasoning to taste, I used smoked paprika, chilli flakes, pepper, salt

-Round container / cake tin

-Extra virgin olive oil

-optional, handful of jalapenos!

Method:

-Preheat oven to 180c

-Dice the onion

-In a large skillet/pot, add oil and brown the onion till translucent, add the garlic

-Add the mince meat, continue to cook until totally browned and chopped up

-Drain excess fat

-Add 285ml water

-Add two packets of taco mix and any other seasoning you’d like. I added healthy amounts of all I listed, I really wanted it to have some kick.

-dice and add jalapenos if you want kick!!

-Simmer until reduced

-Add 1.5 or 2 jars of chunky salsa

-Bring to boil, then simmer till reduced and very thick, not watery

-Grease your container, small layer of meat on the bottom.

-Add first tortilla, then generous meat mixture. Add generous helping of cheese. Repeat until all tortilla used.

-Top last tortilla with meat mix and heaps of cheese.

-Bake in the oven around 20 minutes, or until cheese on top has browned sufficiently.

-Allow to cool and cheese to semi harden Serve with dollop of sour cream or avocado… Or both!!

I’m not very good with nutrients, but this makes 4 generous serves, and the wraps only add 3 grams per serve.

This meal also reheats really well in the microwave!

Tip!

Want to change it up and make it a little easier? You can substitute thinly sliced zucchini for the low-carb lasagna sheets.

If you want to prepare this meal ahead you can make both the ground beef mixture and the lasagna sheets ahead of time and store in the freezer. Make sure to place parchment paper between the sheets when storing or they will stick together.
