  • 6 large eggs

  • 1/2 cup diced green bell peppers
  • 1/2 cup diced onions
  • 1/2 cup diced mushrooms
  • Salt and pepper to taste
  • Optional: diced tomatoes, spinach, or other low-carb vegetables

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground sausage over medium heat, breaking it into smaller pieces as it cooks. Once it’s browned and cooked through, remove it from the skillet and set it aside.
  3. In the same skillet, add a little cooking oil if needed, and then sauté the diced green bell peppers, onions, and mushrooms until they’re softened and the onions are translucent. Add any additional low-carb vegetables you’d like.
  4. In a mixing bowl, whisk together the eggs and heavy cream. Season with salt and pepper.
  5. In a greased 9×9-inch (23×23 cm) baking dish, layer the cooked sausage, sautéed vegetables, and shredded cheddar cheese.
  6. Pour the egg and heavy cream mixture over the layers in the baking dish.
  7. Bake the casserole in the preheated oven for about 25-30 minutes or until the eggs are set and the top is lightly browned.
  8. Allow the casserole to cool slightly before serving.
