Ingredients:
For the Casserole:
- 1 pound of ground breakfast sausage (look for low-carb options without added sugars)
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1/2 cup diced green bell peppers
- 1/2 cup diced onions
- 1/2 cup diced mushrooms
- Salt and pepper to taste
- Optional: diced tomatoes, spinach, or other low-carb vegetables
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground sausage over medium heat, breaking it into smaller pieces as it cooks. Once it’s browned and cooked through, remove it from the skillet and set it aside.
- In the same skillet, add a little cooking oil if needed, and then sauté the diced green bell peppers, onions, and mushrooms until they’re softened and the onions are translucent. Add any additional low-carb vegetables you’d like.
- In a mixing bowl, whisk together the eggs and heavy cream. Season with salt and pepper.
- In a greased 9×9-inch (23×23 cm) baking dish, layer the cooked sausage, sautéed vegetables, and shredded cheddar cheese.
- Pour the egg and heavy cream mixture over the layers in the baking dish.
- Bake the casserole in the preheated oven for about 25-30 minutes or until the eggs are set and the top is lightly browned.
- Allow the casserole to cool slightly before serving.
