- 1 Egg
- 2 tablespoon Coconut Flour
- ½ teaspoon Baking Powder
- ¼ cup Zucchini, peeled and diced
- 1 tablespoon Brown Erythritol
- ¼ teaspoon Cinnamon
- Oil, for frying
- 2 tablespoon Powdered Erythritol
- 2 tablespoon Heavy Cream
INSTRUCTIONS
- Toss the zucchini in brown erythritol and cinnamon.
- Whisk together the butter, cream, egg, coconut flour, and baking powder.
- Fold the zucchini into the batter.
- Heat oil in a pan. Drop spoonfuls of the batter in and fry until golden brown on both sides.
- Drain on paper towels.
- Stir together powdered erythritol and heavy cream.
- Drizzle glaze over the fritters.
