INSTRUCTIONS:
LAYER OF CHEESECAKE:
A bit of salt
225 grams of cream cheese(8 oz.)
Essence of vanilla, one tsp.
0.5 cup of whipping cream, heavy
Monk fruit sweetener/erythritol(powdered), three tbsp.
BLUEBERRY LAYER:
Juice of lemon, 1 tsp
1 cup of blueberries, fresh/frozen
Xanthan gum, 0.5 tsp.
~2 tbsp. of low-carb sweetener, powdered/liquid
Water, two tbsp.
THE OPTIONAL CRUST LAYER:
Cinnamon, one-fourth tsp.
0.5 cup of almond flour
A tbsp. of preferred sweetener
Two tbsp. of melted butter
INGREDIENT NOTES:
SWEETENER:
Use any keto sweetener like allulose, stevia blend, monkfruit, or erythritol, but in powdered form. As the grains of sweetener will ruin the texture.
ALMOND FLOUR:
The crust making is optional, but it gives the nutty crunch, which will give you the feel of graham cracker style. You may go for the coconut flour or crushed pecans as a replacement.
CHEESE(CREAM):
This is the foundation of all cheesecakes & gives the velvety texture. If you want to go vegan, then use vegan cheese(cream).
BLUEBERRIES:
It is the lowest-carb berry among all the other. Use fresh/frozen as per availability. Swap the blueberries with either of the blackberries/raspberries.
CREAM(HEAVY):
It increases the volume of the cheesecake & makes it light when mixed with the cream cheese. You may use the cream cheese for a non-dairy & paleo option.

INSTRUCTIONS:
Include the juice of a lemon, blueberries, water, & sweetener in a small saucepan.
Cook it over the normal flame for ~six minutes while mixing it.
In the meantime, the berries will tender & release their flavor to thicken the mixture.
If the mixture is not thick as per your requirements, include xanthan gum, mix to dissolve & cool completely.
CHEESECAKE FILLING:
Include the cream cheese(softened) in a big bowl.
Beat it using the mixer(electric) to have a smooth texture.
Next, include salt, sweetener, & vanilla essence in the beaten cream cheese.
Beat only till all the items are well incorporated.
Whip the cream(heavy) in another bowl till the formation of peaks(soft).
Now, transfer the cream(whipped) to the mixture(cream cheese).
Grab the spatula & fold them with gentle hands till they mix properly.
LAYER OF CRUST:
Include the melted butter, cinnamon, flour of almond, & sweetener in a little bowl.
Mix them well to have a mixture like wet sand.
ASSEMBLING TIME:
Grab your serving jars & start layering.
First, go for the ~2 tbsp. of the crust mixture to form a base.
Next, dollop ~three tbsp. of cheesecake filling
The third layer will be of the blueberry compote, ~two tbsp.
Continue layering in a similar order until the jar’s top is reached.
Top with the sauce of blueberry or fresh blueberries.
The jars need to be refrigerated for a minimum of ~sixty mins.
Serve the chilled glasses to enjoy the Keto Blueberry Cheesecake parfaits.
TIPS:
Never fold the whipped cream harshly into the cream cheese mixture. Folding gently will give you the right texture you want.
You can assemble these blueberry parfaits days before & they will still be the same as fresh when you serve them days later.
Cool the blueberry compote down to normal room temperature. Otherwise, your cheesecake filling will start to melt when it comes into contact with the filling.
If you assemble the parfaits in small mason jars with a tight lid, you can grab & go whenever you want.

REFRIGERATION:
Cover the leftover jars of blueberry parfaits & refrigerate them for ~five days. They should ideally be eaten within three(3) days.
FREEZING:
The freezing of these parfaits will ruin the texture of the berries & cream, so it is not suitable for freezing.
FAQs:
Is the crust layer mandatory?
The layer of crust is optional as per your wish. Omitting the crust will resultantly lower carbs.
Will the frozen version of blueberries work the same way as fresh?
Sure! you don’t even need to defrost the frozen blueberries to form the compote. They will also work fine.
What other berries will be suitable if blueberries are not available?
You may go for blackberries, raspberries, or strawberries, as they all have lower carbs if you didn’t find blueberries anywhere.
