Keto Breakfast Casserole:

Ingredients:

  • 1 pound ground sausage (pork or turkey)
  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can diced tomatoes, drained (or use fresh tomatoes if preferred)
  • 1 can diced green chilies, drained
  • 1/2 cup sliced black olives
  • Salt and pepper to taste
  • Optional: chopped green onions or cilantro for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish with butter or cooking spray.
  2. In a skillet over medium heat, cook the ground sausage until browned and fully cooked. Remove from heat and drain any excess grease.
  3. Spread the cooked sausage evenly along the bottom of the prepared baking dish, creating a layer.
  4. In a large mixing bowl, crack the eggs and whisk them until well beaten.
  5. Add the shredded cheddar cheese, shredded mozzarella cheese, diced tomatoes, diced green chilies, and sliced black olives to the bowl with the eggs. Mix everything together until well combined.
  6. Season the egg mixture with salt and pepper to taste, remembering that the sausage and cheeses may already add some saltiness.
  7. Pour the egg mixture evenly over the cooked sausage in the baking dish, making sure to cover the sausage completely.
  8. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the eggs are set and the top is lightly golden brown.
