Keto Brocolli Cheddar Keto Baked Fritters

Ingredients

  • 30 g Broccoli
  • 120 g Cheddar cheese shredded
  • 2 Eggs large
  • 1 tbsp Oat fibre
  • 1 tsp Cajun seasoning
  • 1 tbsp Avocado oil

Instructions

  • Cut the broccoli into small pieces and steam lightly until just soft. Drain, and dry with paper towels.
  • Toss the broccoli in the oat fibre and cajun seasoning until coated evenly.
  • Add the beaten egg and stir.
  • Add the cheddar cheese and stir until evenly coated.
  • Place a non-stick pan over medium heat and add the oil.
  • Once the pan is hot, divide the mixture into 4, and spoon into the pan.
  • Cook on one side until the cheese on top of the fritter begins to melt and the bottom is crusty brown (about 2 – 3 minutes).
  • Flip and cook on the other side until browned.
