Keto Brocolli Cheddar Keto Baked Fritters

Ingredients
- 30 g Broccoli
- 120 g Cheddar cheese shredded
- 2 Eggs large
- 1 tbsp Oat fibre
- 1 tsp Cajun seasoning
- 1 tbsp Avocado oil
Instructions

Cut the broccoli into small pieces and steam lightly until just soft. Drain, and dry with paper towels.

Toss the broccoli in the oat fibre and cajun seasoning until coated evenly.

Add the beaten egg and stir.

Add the cheddar cheese and stir until evenly coated.

Place a non-stick pan over medium heat and add the oil.

Once the pan is hot, divide the mixture into 4, and spoon into the pan.

Cook on one side until the cheese on top of the fritter begins to melt and the bottom is crusty brown (about 2 – 3 minutes).

Flip and cook on the other side until browned.
