Keto Cheesecake Brownies Recipe

Ingredients

Cream Cheese Filling:

  • 8 ounces cream cheese, softened
  • 1/3 cup granulated erythritol or Swerve
  • 1 large egg, at room temperature
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons heavy whipping cream

Brownie Batter:

  • 3 large eggs
  • 1/2 cup granulated erythritol or Swerve
  • 6 tablespoons unsalted butter
  • 100 grams unsweetened dark chocolate
  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup dark chocolate chips

Instructions

  1. Prepare the Cream Cheese Filling:
    • In a mixing bowl, beat the softened cream cheese until smooth.
    • Add the erythritol and continue to beat until well combined.
    • Mix in the egg, vanilla extract, and heavy whipping cream until the mixture is smooth and creamy.
    • Set aside.
  2. Prepare the Brownie Batter:
    • Preheat your oven to 350°F (175°C). Spray an 8×8-inch baking pan with non-stick spray or line it with parchment paper.
    • In a microwave-safe bowl, melt the butter with the unsweetened dark chocolate. Heat in 30-second intervals, stirring in between, until fully melted and smooth.
    • Allow the chocolate mixture to cool slightly. Then, whisk in the eggs and granulated erythritol until the mixture is well blended.
    • Stir in the vanilla extract.
    • In a separate bowl, combine the almond flour, salt, and baking powder. Add this dry mixture to the chocolate mixture and stir until just combined.
    • Fold in the dark chocolate chips.
  3. Assemble and Bake:
    • Pour half of the brownie batter into the prepared pan, spreading it evenly.
    • Spoon the cream cheese filling over the brownie batter, spreading it gently.
    • Top with the remaining brownie batter, spreading it evenly over the cream cheese layer.

  4. Bake:
    • Bake in the preheated oven for 32-35 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
