Keto Cheesy Baked Cauliflower Recipe

Ingredients:

  • 1 large head of cauliflower (about 2-3 cups of florets)
  • 2 cups shredded sharp cheddar cheese (or cheese of your choice)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/4 cup cream cheese (softened)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1/2 teaspoon dried thyme (optional)
  • 1/4 teaspoon dried rosemary (optional)
  • Salt and pepper (to taste)
  • 1/4 cup chopped fresh parsley (for garnish, optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Cauliflower:
    • Cut the cauliflower into bite-sized florets.
    • Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5 minutes, or until tender but still firm. Drain well and pat dry with paper towels.
  3. Make Cheese Sauce:
    • In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.
    • Reduce heat to low and add the cream cheese, stirring until melted and smooth.
    • Gradually add the heavy cream, stirring constantly until well combined.
    • Add the cheddar cheese and Parmesan cheese, stirring until the cheese is melted and the sauce is smooth.
    • Season with salt, pepper, thyme, and rosemary, if using.
  4. Combine and Bake:
    • Place the cooked cauliflower in a large mixing bowl. Pour the cheese sauce over the cauliflower and stir to coat evenly.
    • Transfer the cauliflower and cheese mixture to a baking dish.
    • Bake in the preheated oven for about 20-25 minutes, or until the top is golden and bubbly.
  5. Garnish and Serve:
    • Garnish with chopped fresh parsley, if desired. Serve warm.
