Keto Cheesy Baked Cauliflower Recipe
Ingredients:
- 1 large head of cauliflower (about 2-3 cups of florets)
- 2 cups shredded sharp cheddar cheese (or cheese of your choice)
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1/4 cup cream cheese (softened)
- 1 tablespoon olive oil
- 2 cloves garlic (minced)
- 1/2 teaspoon dried thyme (optional)
- 1/4 teaspoon dried rosemary (optional)
- Salt and pepper (to taste)
- 1/4 cup chopped fresh parsley (for garnish, optional)
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare Cauliflower:
- Cut the cauliflower into bite-sized florets.
- Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5 minutes, or until tender but still firm. Drain well and pat dry with paper towels.
- Make Cheese Sauce:
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.

- Transfer the cauliflower and cheese mixture to a baking dish.
- Bake in the preheated oven for about 20-25 minutes, or until the top is golden and bubbly.
- Garnish and Serve:
- Garnish with chopped fresh parsley, if desired. Serve warm.
