1 large head of cauliflower (about 2-3 cups of florets)
2 cups shredded sharp cheddar cheese (or cheese of your choice)
1/2 cup grated Parmesan cheese
1/2 cup heavy cream
1/4 cup cream cheese (softened)
1 tablespoon olive oil
2 cloves garlic (minced)
1/2 teaspoon dried thyme (optional)
1/4 teaspoon dried rosemary (optional)
Salt and pepper (to taste)

Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare Cauliflower:
Cut the cauliflower into bite-sized florets.
Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5 minutes, or until tender but still firm. Drain well and pat dry with paper towels.
Make Cheese Sauce:
In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.

Place the cooked cauliflower in a large mixing bowl. Pour the cheese sauce over the cauliflower and stir to coat evenly.
Transfer the cauliflower and cheese mixture to a baking dish.
Bake in the preheated oven for about 20-25 minutes, or until the top is golden and bubbly.
Garnish and Serve:
Garnish with chopped fresh parsley, if desired. Serve warm.
