1 lb (450g) ground chicken (you can also use ground turkey)
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 cup almond flour
1 large egg
2 tablespoons chopped fresh parsley
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking oil (such as avocado oil or olive oil) for frying
Instructions:
In a large mixing bowl, combine the ground chicken, shredded mozzarella, grated Parmesan, almond flour, egg, chopped parsley, garlic powder, onion powder, salt, and black pepper. Mix everything thoroughly until well combined.
Heat a frying pan or skillet over medium heat and add enough cooking oil to cover the bottom of the pan.
Take about 2 tablespoons of the chicken mixture and form it into a small fritter shape using your hands. You can also use a cookie scoop or spoon to portion the mixture.
Carefully place the fritters into the hot oil, making sure not to overcrowd the pan. Cook the fritters for about 3-4 minutes per side or until they are golden brown and cooked through.
Once the fritters are cooked, transfer them to a plate lined with paper towels to drain any excess oil.
Repeat the process with the remaining chicken mixture until all the fritters are cooked.
