Keto Cheesy Chicken Fritters
Ingredients:
- 1 lb (450g) ground chicken (you can also use ground turkey)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup almond flour
- 1 large egg
- 2 tablespoons chopped fresh parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking oil (such as avocado oil or olive oil) for frying
Instructions:
- In a large mixing bowl, combine the ground chicken, shredded mozzarella, grated Parmesan, almond flour, egg, chopped parsley, garlic powder, onion powder, salt, and black pepper. Mix everything thoroughly until well combined.
- Heat a frying pan or skillet over medium heat and add enough cooking oil to cover the bottom of the pan.
- Take about 2 tablespoons of the chicken mixture and form it into a small fritter shape using your hands. You can also use a cookie scoop or spoon to portion the mixture.
- Carefully place the fritters into the hot oil, making sure not to overcrowd the pan. Cook the fritters for about 3-4 minutes per side or until they are golden brown and cooked through.
- Once the fritters are cooked, transfer them to a plate lined with paper towels to drain any excess oil.
- Repeat the process with the remaining chicken mixture until all the fritters are cooked.
