This pizza is super special because the crust is made of chicken! We mix chicken with cheese and yummy spices, bake it until it’s crispy, then add BBQ chicken, bacon, veggies, and more cheese on top. Chicken Crusted BBQ Chicken Bacon Pizza

Ingredients:

Crust:

  • 1 can (10 oz) white chicken meat, drained
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Italian seasoning blend (pepper, salt, garlic, onion)
  • Olive oil or non-stick cooking spray

Toppings:

  • Leftover BBQ chicken wings, chopped
  • Bacon crumbles
  • Mozzarella cheese, shredded
  • Cheddar cheese, shredded
  • Sugar-free BBQ sauce
  • Onion, thinly sliced
  • Mushrooms, sliced
  • Bell peppers, sliced
  • Ranch dressing (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil, and lightly grease it with olive oil or non-stick cooking spray.
  2. In a large mixing bowl, combine the drained chicken meat, egg, grated Parmesan cheese, shredded mozzarella cheese, and a generous sprinkle of Italian seasoning blend. Mix everything together until well combined, breaking up the chicken meat into small pieces. You can use an electric mixer for this step if you prefer.
  3. Spread the chicken mixture onto the prepared baking sheet, shaping it into a round or rectangular pizza crust, about 1/4 inch thick. Make sure to spread it evenly to ensure even cooking.
  4. Bake the crust in the preheated oven for 15-20 minutes, or until it becomes golden brown and slightly crispy around the edges. If the crust sticks to the foil, gently loosen it with a spatula and continue baking.
  5. While the crust is baking, prepare your toppings. In a skillet over medium heat, sauté the sliced onion, mushrooms, and bell peppers until they are softened and lightly browned.
  6. Once the crust is done baking, remove it from the oven and spread a thin layer of sugar-free BBQ sauce over the surface.
  7. Top the BBQ sauce with the chopped BBQ chicken wings, bacon crumbles, sautéed vegetables, and a generous sprinkle of shredded mozzarella and cheddar cheese.
  8. Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
  9. Remove the pizza from the oven and let it cool slightly before slicing. Serve with a side of ranch dressing and additional BBQ sauce for dipping, if desired.
