Keto Chicken Quesadillas

Keto Chicken Quesadillas:

Ingredients:

For the Filling:

  • 1 can of cooked chicken (you can adjust the amount based on your preference)
  • Garlic powder, to taste
  • Onion powder, to taste
  • Cayenne pepper, to taste
  • Turmeric (for color and flavor)
  • 1/2 can of canned mushrooms (or fresh if you prefer)
  • 2 tablespoons cream cheese

For the Quesadillas:

  • Low-carb keto tortillas
  • Shredded fiesta cheese (or any low-carb cheese of your choice)
  • Sweet Baby Ray’s Buffalo Wing Sauce (or any low-carb hot sauce)
  • Butter for cooking

For the Dipping Sauce:

  • Buffalo Wing Sauce (use the same sauce as in the quesadillas)
  • Sour cream

Instructions:

Preparing the Chicken Mixture:

  1. Drain the canned chicken and place it in a mixing bowl.
  2. Season the chicken with garlic powder, onion powder, cayenne pepper, and a pinch of turmeric to your liking. Adjust the seasonings to suit your taste preferences.
  3. Use a fork to shred the chicken and mix it with the seasonings until well combined. Set this mixture aside.

Cooking the Chicken and Mushroom Filling:

  1. In a small pan, melt a bit of butter over medium heat.
  2. Add the seasoned chicken mixture to the pan and cook for about 5 minutes until it’s heated through and has absorbed the flavors.
  3. Add the canned mushrooms (you can adjust the amount to your preference) to the pan and continue cooking for a few more minutes.
  4. Stir in about 2 tablespoons of cream cheese to make the filling creamy. Cook for a couple more minutes until everything is well incorporated, then remove the mixture from the pan and set it aside.

Assembling and Cooking the Quesadillas:

  1. In the same pan, add a bit more butter and place one low-carb keto tortilla in the pan.
  2. Spread a portion of the chicken and mushroom mixture onto one half of the tortilla.
  3. Drizzle some Sweet Baby Ray’s Buffalo Wing Sauce (or your preferred low-carb hot sauce) over the chicken mixture.
  4. Sprinkle a generous amount of shredded fiesta cheese (or your choice of low-carb cheese) on top of the chicken mixture.
  5. Fold the other half of the tortilla over the filling, creating a half-moon shape.
  6. Press down lightly with a spatula and cook for about 2 minutes on each side or until the tortilla is golden brown and the cheese is melted.

Making the Dipping Sauce:

  1. For the dipping sauce, simply mix Buffalo Wing Sauce (use the same sauce as in the quesadillas) and sour cream together in a bowl. Adjust the proportions to your preferred taste and heat level.

Serving:

  1. Remove the cooked quesadillas from the pan, cut them into wedges, and serve them hot with the dipping sauce.
