Keto Creamy Tomato Basil Soup

It’s incredible how easy this Keto Creamy Tomato Basil Soup is to make and how quick it comes together.   You can whip it up on a busy weeknight, when you have a bunch of other tasks to accomplish as you cook.  It’s definitely a multi-tasking friendly sort of dinner.  You don’t need to constantly stand over it the entire time.  Get it started, do a couple things you have to get done, come back and stir once in awhile.  Bam.  Dinner.

Ingredients:

4 oz butter

75 grams of onion

One can of crushed tomato

1.5 cups of chicken or vegetable broth

Pepper

Oregeno

Basil

Recipe:

Melt butter in a sauce pan. Once melted add chopped onion. After onions become translucent add can of tomato. Stir constantly and attempt to break the tomato up. Add in the broth. Continuously stir on high heat. After bubbling occurs and soup is hot take off of heat. Take an electric blender to it to break up onions and tomato. I served and topped with a bit of oregeno, pepper, and dried basil. Also threw a few of my homemade cheese whisps on top.
