INGREDIENTS:
An egg
To taste of Powdered black pepper & salt
2 zucchinis
A pinch of red pepper flakes, crushed
0.5 cup of mozzarella cheese
Italian seasoning, half a teaspoon
1/3rd cup of parmesan cheese
Minced garlic, 2 cloves
1 tbsp. of fresh parsley
0.25 cup of almond flour
INSTRUCTIONS:
Warm up the oven(empty) at 400°F, & get to work.
Grab the baking sheet & cover it using the paper of parchment/silicone mat.
Now, peel & then grate the zucchini.
After grating, wrap it in clean cheesecloth/kitchen towel.
Press it to let out every drop of water as you can.
Now, include the herbs, garlic, mozzarella, zucchini(pressed), seasonings, flour of almond, & parmesan cheese.
Mix them till all the items incorporate nicely.
Now use a cookie scoop to separate the batter and make it round in shape.
Similarly, work with the whole batter.
To slightly spread the balls, apply pressure to them.
Now, place these balls on the sheet of baking.
Transfer the baking sheet with balls to the oven.
With changing their sides, bake the balls till you see them crisp & golden.
It will take ~eighteen mins, then you remove them from the oven.
AIR FRYER:
Air fry the balls at 190 °C for ~twelve mins with a gentle shaking in between.
Your Keto Zucchini Bites are ready to serve with your choice of keto dip.
TIPS:
Remove the moisture from the grated zucchini to have the crispiest results.
Don’t mix them for longer. Stop mixing as they combined well.
Use a single cookie scoop to make all balls so they will be uniform in size.
To get the extra crisp, give them ~ three minutes on the top rack near the flame.

Keep them in a container(air-tight) & save that container in the refrigerator. Consume them within ~four days.
FREEZING:
When the baked bites come to the surrounding temperature, arrange them on the tray. Shift that tray to the freezer. Once frozen, transfer the bites to a bag(freezer-safe) & freeze them for ~sixty days. Defrost, reheat & enjoy whenever you want using an oven/airfryer.
REHEATING:
Give the refrigerated/defrosted bites ~ seven mins in the oven at 190 °C or ~five mins using an air fryer at 175 °C.

What might be the reason that results in the soggy bite?
If you leave the water content in the grated zucchini, the result will be moist bites, which you will not like.
