Keto Meatball Boats Recipe

Ingredients:

  • For the Meatballs:
    • 1 lb ground beef (80% lean)
    • 1 egg
    • 1/4 cup grated Parmesan cheese
    • 1/4 cup almond flour
    • 1/4 cup chopped fresh parsley
    • 2 cloves garlic, minced
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 1 tsp Italian seasoning
  • For the Zucchini Boats:
    • 4 medium zucchinis
    • 1 cup marinara sauce (sugar-free)
    • 1 cup shredded mozzarella cheese

Instructions:

  1. Prepare the Meatballs:
    1. Preheat the oven to 400°F (200°C).
    2. In a large bowl, combine the ground beef, egg, Parmesan cheese, almond flour, parsley, garlic, salt, pepper, and Italian seasoning. Mix until well combined.
    3. Form the mixture into small meatballs, about 1 inch in diameter.
    4. Place the meatballs on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until cooked through.
  2. Prepare the Zucchini Boats:
    1. While the meatballs are baking, prepare the zucchinis. Cut each zucchini in half lengthwise and scoop out the seeds to create a boat shape.
    2. Place the zucchini boats on a baking sheet lined with parchment paper.
    3. Spoon a little marinara sauce into each zucchini boat.
    4. Place 2-3 meatballs into each zucchini boat (depending on the size of your zucchinis and meatballs).
    5. Spoon additional marinara sauce over the meatballs.
    6. Sprinkle shredded mozzarella cheese on top of each zucchini boat.
  3. Bake the Zucchini Boats:
    1. Bake in the preheated oven for 20-25 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.
    2. Remove from the oven and let cool slightly before serving.
