  • 1 cup almond flour

Filling:

  • 1 cup cream cheese
  • 2 eggs
  • 2 tablespoons vanilla extract
  • 7 squirts or approximately 10 drops of liquid stevia (adjust to taste)
  • 1/2 cup erythritol or your desired baking sugar substitute

Instructions:

  1. Preheat your oven to 350°F (175°C). Prepare a muffin tin with paper liners or lightly grease the cups.
  2. In a microwave-safe bowl, melt the butter. Once melted, mix in the almond flour until you get a paste-like consistency.
  3. Divide the almond flour mixture evenly among the prepared muffin cups, pressing it down firmly to form the crust.
  4. In a mixing bowl, whip the cream cheese until it becomes creamy and soft.
  5. Add the eggs and vanilla extract to the cream cheese, and stir until well combined.
  6. Mix in the desired sweetener (a combination of erythritol and liquid stevia, if preferred) until everything is evenly incorporated.
