Keto Pretzel Bites

Ingredients:

  • 1 1/2 cups shredded cheese (such as Colby blend, or your favorite cheese)
  • 2 tablespoons cream cheese
  • 1 large egg (room temperature)
  • 3/4 cup almond flour
  • 1/2 teaspoon baking powder
  • Coarse salt or pink salt (for sprinkling, optional)

Instructions:

1. Prepare the Cheese Mixture:

  1. In a microwave-safe bowl, combine the shredded cheese and cream cheese.
  2. Microwave on high for 1 1/2 minutes, or until the mixture is melted and smooth. Stir well to ensure it’s fully combined.

2. Mix the Dough:

  1. Allow the cheese mixture to cool slightly, then beat in the egg until well incorporated.
  2. Add the almond flour and baking powder to the mixture. Stir until a dough forms. The dough should be somewhat sticky but manageable.

3. Shape the Pretzel Bites:

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper, a baking mat, or foil.
  3. Take a tablespoon of the dough and roll it into a log shape. Cut each log into bite-sized pieces (about 6 pieces per log). Place the pieces onto the prepared baking sheet, spacing them slightly apart.
  4. If desired, sprinkle the tops of the pretzel bites with coarse salt or pink salt for added flavor and a traditional pretzel touch.

4. Bake:
