Instructions:
1. Prepare the Cheese Mixture:
- In a microwave-safe bowl, combine the shredded cheese and cream cheese.
- Microwave on high for 1 1/2 minutes, or until the mixture is melted and smooth. Stir well to ensure it’s fully combined.
2. Mix the Dough:
- Allow the cheese mixture to cool slightly, then beat in the egg until well incorporated.
- Add the almond flour and baking powder to the mixture. Stir until a dough forms. The dough should be somewhat sticky but manageable.
3. Shape the Pretzel Bites:
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper, a baking mat, or foil.
- Take a tablespoon of the dough and roll it into a log shape. Cut each log into bite-sized pieces (about 6 pieces per log). Place the pieces onto the prepared baking sheet, spacing them slightly apart.
- If desired, sprinkle the tops of the pretzel bites with coarse salt or pink salt for added flavor and a traditional pretzel touch.
4. Bake:
- Bake in the preheated oven for 12 minutes, or until the pretzel bites are golden brown. If you prefer them a bit more crispy, you can bake them for an additional 2-3 minutes.
5. Serve:
- Allow the pretzel bites to cool slightly before serving. Enjoy them with your favorite dipping sauce, such as mustard, cheese dip, or a low-carb ranch dressing.
Additional Notes:
- This recipe makes about 30 pretzel bites, or you can shape the dough into 5 full-size pretzels if you prefer.
- These pretzel bites are best enjoyed fresh but can be stored in an airtight container for a few days.
Enjoy these savory, cheesy keto pretzel bites as a perfect snack or appetizer that fits perfectly into your low-carb lifestyle!
