Keto Pull-Apart Milk Bread
Ingredients:
For the Dough:
2 1/4 cups almond flour
1/4 cup coconut flour
1/4 cup psyllium husk powder
1/4 cup powdered erythritol (or any keto-friendly sweetener)
2 tsp baking powder
1/2 tsp salt
1 cup warm water
1/4 cup melted coconut oil (or butter)
2 large eggs
1 tsp apple cider vinegar
For the Filling:
1/4 cup melted butter
1 tbsp ground cinnamon
2 tbsp powdered erythritol (optional, for a sweeter filling)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
Prepare the Dough:
In a large bowl, whisk together the almond flour, coconut flour, psyllium husk powder, powdered erythritol, baking powder, and salt.
In a separate bowl, mix the warm water, melted coconut oil, eggs, and apple cider vinegar.
Combine the wet and dry ingredients, stirring until a dough forms. The dough should be soft but not sticky.
Shape the Bread:
Divide the dough into small balls, about 1-1.5 inches in diameter.
In a small bowl, mix the melted butter with cinnamon and optional erythritol for a sweeter filling.
Dip each dough ball into the cinnamon butter mixture, then place them in the prepared loaf pan. You can stack them or arrange them in a pattern you like.
Bake the Bread:
Bake in the preheated oven for about 30-35 minutes, or until the bread is golden brown and cooked through. A toothpick inserted into the center should come out clean.
Cool and Serve:
Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Pull apart and enjoy!
