Keto Reuben Casserole:

Ingredients:

  • 1 lb (450g) corned beef, thinly sliced
  • 1 cup sauerkraut, drained
  • 1 cup shredded Swiss cheese
  • 1/2 cup mayonnaise
  • 1/4 cup sugar-free ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon dill pickles, chopped
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
  2. Layer the sliced corned beef in the bottom of the baking dish.
  3. Spread the drained sauerkraut over the corned beef.
  4. In a mixing bowl, combine mayonnaise, sugar-free ketchup, Dijon mustard, chopped dill pickles, Worcestershire sauce, garlic powder, onion powder, and black pepper. Mix until well combined.
  5. Spread the sauce mixture evenly over the sauerkraut layer.
  6. Sprinkle shredded Swiss cheese over the top of the casserole.
  7. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes or until the casserole is heated through and the cheese is melted and bubbly.
  8. Remove the foil and bake for an additional 5-10 minutes to allow the cheese to brown slightly.
  9. Once done, let it cool for a few minutes before serving.
