Ingredients:
- 1 lb (450g) corned beef, thinly sliced
- 1 cup sauerkraut, drained
- 1 cup shredded Swiss cheese
- 1/2 cup mayonnaise
- 1/4 cup sugar-free ketchup
- 1 tablespoon Dijon mustard
- 1 tablespoon dill pickles, chopped
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground black pepper
- 1 tablespoon olive oil
Instructions:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
- Layer the sliced corned beef in the bottom of the baking dish.
- Spread the drained sauerkraut over the corned beef.
- In a mixing bowl, combine mayonnaise, sugar-free ketchup, Dijon mustard, chopped dill pickles, Worcestershire sauce, garlic powder, onion powder, and black pepper. Mix until well combined.
- Spread the sauce mixture evenly over the sauerkraut layer.
- Sprinkle shredded Swiss cheese over the top of the casserole.
- Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes or until the casserole is heated through and the cheese is melted and bubbly.
- Remove the foil and bake for an additional 5-10 minutes to allow the cheese to brown slightly.
- Once done, let it cool for a few minutes before serving.
