LOW CARB PIZZA CASSEROLE WITH OVEN-ROASTED CAULIFLOWER
This recipe offers a keto-friendly and satisfying alternative to traditional pizza, with the added goodness of oven-roasted cauliflower.
Ingredients:
- 1 large head of cauliflower
- 1 ½ cups Rao’s marinara sauce (or any low-carb marinara sauce)
- 1 lb house-seasoned hot Italian sausage (or your preferred low-carb sausage)
- 1 cup pepperoni slices
- 1 cup sliced mushrooms
- 4 cloves garlic, minced
- 1 medium onion, chopped
- 1 green pepper, chopped
- 1/2 cup black olives, sliced
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon crushed red pepper flakes (adjust to taste)
- Salt and pepper to taste

- Instructions:
- Prepare the Cauliflower:
- Preheat your oven to 425°F (220°C).
- Cut the cauliflower into bite-sized florets. Toss them in olive oil, salt, and pepper, and place them on a baking sheet. Roast them in the preheated oven for about 20-25 minutes or until they’re tender and have a slight char.
- Cook the Sausage:
- While the cauliflower is roasting, cook the Italian sausage in a large skillet over medium-high heat, breaking it into crumbles with a spatula. Once it’s browned and cooked through, drain any excess grease and set aside.
- Prepare the Sauce and Vegetables:
- In the same skillet, sauté the garlic, onions, green pepper, and mushrooms until they are softened and fragrant. Add salt, pepper, dried oregano, dried basil, and crushed red pepper flakes. Stir in the marinara sauce and let it simmer for a few minutes.
- Assemble the Casserole:
- In a large casserole dish, start with a layer of roasted cauliflower.
- Spread half of the sausage over the cauliflower.
- Pour half of the sauce and vegetable mixture over the sausage.
- Sprinkle half of the mozzarella and Parmesan cheese over the sauce.
- Add half of the pepperoni and black olives.
- Repeat the layers one more time, finishing with the remaining cheeses and toppings.
- Bake the Casserole:
- Cover the casserole with foil and bake in a preheated oven at 350°F (175°C) for about 20-25 minutes.
- Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted, bubbly, and slightly browned.
