Ingredients:
- 2 ham hocks
- 1 pound of cauliflower florets, cut into small pieces
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 2 celery stalks, diced
- 2 carrots, diced (in moderation, as they contain some carbs)
- 4 cups of chicken broth
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- In a large soup pot, heat the olive oil over medium heat. Add the diced onion, celery, and garlic. Sauté until the vegetables are softened and the onion becomes translucent.
- Add the ham hocks to the pot and brown them for a few minutes on all sides. This will help release more flavor.
- Pour in the chicken broth and add the bay leaf and dried thyme. Season with salt and pepper to taste. Be mindful of the salt, as ham can be quite salty.
- Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 1 to 1.5 hours, or until the ham hocks are tender and the meat is falling off the bone.
- Remove the ham hocks from the pot and let them cool slightly. Once they’re cool enough to handle, shred the meat and discard the bone, skin, and any excess fat.
- Return the shredded ham hock meat to the pot.
- Add the cauliflower florets and diced carrots to the soup. Continue simmering until the vegetables are tender, which should take about 15-20 minutes.
- Adjust the seasoning with salt and pepper as needed.
- Serve your keto bean and ham hock soup hot. You can garnish it with chopped fresh herbs like parsley or chives if you like.
