INGREDIENTS

1 ¼ CUP ALMOND FLOUR

½ TSP BAKING SODA

½ TSP SALT

¼ TSP BAKING POWDER

1 STICK OF SOFTENED BUTTER

¾ CUP PACKED BROWN SUGAR – GOLDEN MONKFRUIT – THIS IS KEY!

1 TSP VANILLA EXTRACT

1 LARGE EGG

8-9 OUNCES OF SUGAR FREE CHOCOLATE CHIPS

CAN ADD CHOPPED PECANS – OPTIONAL

INSTRUCTIONS

1. PREHEAT OVEN TO 350 DEGREES

2. MIX SOFTENED BUTTER WITH EGG – MIX WITH MIXER TO GET CREAMY

3. ADD SUGAR, BAKING SODA, SALT, BAKING POWDER, SUGAR AND VANILLA – MIX VERY WELL THEN ADD IN FLOUR.

4. FOLD IN CHOCOLATE CHIPS AND PECANS IF DESIRED

5. REFRIGERATE MIXTURE FOR ABOUT 20 MINUTES TO KEEP THEM FROM FLATTENING OUT

6. SCOOP USING SMALL ICE CREAM SCOOPER ONTO PARCHMENT PAPER AND BACK FOR 10-12 MINUTES – DO NOT OVERBAKE.

7. LET COOL BEFORE MOVING FROM PAN
