KETO Chocolate Egg Pudding Recipie
2 large eggs
1/4 cup unsweetened cocoa powder
2 tbsp. erythritol or your preferred sweetener
1 cup unsweetened almond milk
1 tsp. vanilla extract
1/4 tsp. salt
In a medium-sized mixing bowl, whisk the eggs until smooth.
Add in the cocoa powder, erythritol, almond milk, vanilla extract, and salt. Whisk until everything is well combined.
Pour the mixture into a saucepan and place over medium heat. Cook the mixture, stirring constantly, until it thickens and coats the back of a spoon. This should take about 5-7 minutes.
Remove the saucepan from heat and let the pudding cool down.
Serve the pudding in a bowl or pour into a mason jar. You can add a dollop of whipped cream or some keto-friendly chocolate chips if desired.
