Crustless Keto Pizza Casserole

This keto-friendly casserole is not only tasty but also a great option for a low-carb, high-fat diet.

Ingredients:

  • 2 lbs Italian sausage
  • 2 tbsp olive oil
  • 1 medium yellow onion, thinly sliced
  • 1 large bell pepper, thinly sliced
  • 8 oz baby Bella mushrooms (optional), sliced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 5 oz pepperoni
  • 2 cups tomato sauce
  • 3 cups Mexican blend shredded cheese

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet, brown the Italian sausage over medium-high heat until fully cooked. Once cooked, remove the sausage from the skillet and set it aside.
  3. In the same skillet, add 2 tablespoons of olive oil and heat it over medium heat. Add the thinly sliced onions, bell peppers, and sliced mushrooms (if you’re using them). Sprinkle with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Sauté the vegetables until they become translucent and slightly softened, which should take about 5-7 minutes. Remove from heat.
  4. In a 9×13 inch baking dish, create two layers as follows:
    • Start with a layer of the cooked Italian sausage.
    • Add the sautéed onions, bell peppers, and mushrooms on top of the sausage.
    • Spread 2 cups of tomato sauce evenly over the vegetables.
    • Sprinkle 3 cups of Mexican blend shredded cheese over the sauce.
    • Arrange the pepperoni slices on top of the cheese.
  5. Place the casserole in the preheated oven and bake for 15-20 minutes, or until the cheese is fully melted, and the casserole is bubbling and slightly golden on top.
  6. Once done, remove the casserole from the oven and allow it to cool for a few minutes.
