Cheesy Tuna Melt Pockets

These pocket meals are perfect for a satisfying and flavorful lunch during your 16:8 fasting .

Ingredients:

  • 1 can of tuna, drained
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 10 slices of low-carb tortillas or wraps

Instructions:

  1. Prepare Tuna Salad: In a bowl, combine drained tuna, mayonnaise, Dijon mustard, diced celery, diced red onion, salt, and pepper. Mix until well combined.
  2. Assemble Pockets: a. Lay out the low-carb tortillas or wraps. b. Place a generous scoop of the tuna salad in the center of each tortilla. c. Sprinkle shredded cheddar cheese over the tuna mixture.
  3. Fold and Seal: Fold the tortillas in half, creating a pocket, and press the edges to seal.
  4. Bake or Toast: a. Preheat your oven to 350°F (175°C). b. Place the sealed pockets on a baking sheet and bake for about 10-15 minutes or until the cheese is melted and the pockets are golden brown.

Ingredients:

  • 1 can of spam, sliced
  • 5 eggs, scrambled
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 10 slices of low-carb tortillas or wraps
