Instructions:
Preheat Oven: Preheat your oven to 375°F (190°C).
Prepare Chicken:
Place the chicken breasts between two pieces of plastic wrap or parchment paper. Pound them with a meat mallet or rolling pin until they are about 1/2 inch thick.
Season both sides of the chicken breasts with salt and pepper.
Cook Bacon:
In a skillet over medium heat, cook the bacon strips until crispy. Remove from the skillet and drain on paper towels.
Assemble Roll-Ups:
Spread a thin layer of ranch dressing over each chicken breast.
Sprinkle shredded cheddar cheese evenly on top of the ranch dressing.
Crumble the cooked bacon and sprinkle it over the cheese.
Carefully roll up each chicken breast, securing with toothpicks if needed.
Cook Roll-Ups:
Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, add the chicken roll-ups and sear on each side until golden brown (about 2-3 minutes per side).
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Serve:
Let the roll-ups rest for a few minutes before removing the toothpicks. Garnish with chopped chives if desired. Slice and serve!
