Chicken Bacon Ranch Roll-Ups

Ingredients:

  • 2 large chicken breasts (boneless and skinless)
  • 6 strips of bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing (store-bought or homemade)
  • 1/4 cup chopped fresh chives (optional, for garnish)
  • Salt and pepper (to taste)
  • 1 tablespoon olive oil (for cooking)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Chicken:
    • Place the chicken breasts between two pieces of plastic wrap or parchment paper. Pound them with a meat mallet or rolling pin until they are about 1/2 inch thick.
    • Season both sides of the chicken breasts with salt and pepper.
  3. Cook Bacon:
    • In a skillet over medium heat, cook the bacon strips until crispy. Remove from the skillet and drain on paper towels.
  4. Assemble Roll-Ups:
    • Spread a thin layer of ranch dressing over each chicken breast.
    • Sprinkle shredded cheddar cheese evenly on top of the ranch dressing.
    • Crumble the cooked bacon and sprinkle it over the cheese.
    • Carefully roll up each chicken breast, securing with toothpicks if needed.
  5. Cook Roll-Ups:
    • Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, add the chicken roll-ups and sear on each side until golden brown (about 2-3 minutes per side).
    • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  6. Serve:
    • Let the roll-ups rest for a few minutes before removing the toothpicks. Garnish with chopped chives if desired. Slice and serve!
