Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 2 tablespoons psyllium husk
  • 2 teaspoons baking powder
  • 6 large eggs, separated
  • 1/2 teaspoon lime juice
  • Salt, to taste
  • 1/4 teaspoon stevia (optional, for added sweetness)
  • 1/2 teaspoon vanilla extract
  • 1/3 cup butter, melted
  • 2 teaspoons chia seeds
  • Everything bagel seasoning (optional, for topping)

Instructions

  1. Preheat Oven:
    • Preheat your oven to 325°F (165°C). Grease a bread pan or line it with parchment paper.
  2. Prepare Dry Ingredients:
    • In a large bowl, combine the almond flour, coconut flour, psyllium husk, baking powder, and chia seeds. Mix well.
  3. Mix Wet Ingredients:
    • In a separate bowl, whisk the egg yolks with the melted butter, lime juice, and vanilla extract. If using stevia, add it to this mixture.
  4. Combine Mixtures:
    • Add the wet ingredients to the dry ingredients and stir until well combined.
  5. Whip Egg Whites:
    • In a clean bowl, whisk the egg whites with a pinch of salt and lime juice until stiff peaks form.
  6. Fold and Assemble:
    • Gently fold the whipped egg whites into the batter, being careful not to deflate them. The batter should be light and airy.
    • Transfer the batter into the prepared bread pan, smoothing the top with a spatula.

  7. Bake:
