Keto Biscuits

Ingredients:

  • 2 large eggs
  • 2 tablespoons ricotta cheese
  • 2 tablespoons melted butter
  • 1 cup almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)

For the Butter Brush:

  • 2 tablespoons melted butter
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried parsley
  • 1/8 teaspoon salt

Instructions:

1. Prepare the Wet Ingredients:

  1. In a medium bowl, whisk together the eggs, melted butter, and ricotta cheese until smooth and well combined.

2. Mix the Dry Ingredients:

  1. In a separate bowl, combine the almond flour, baking soda, and salt. Stir until evenly mixed.

3. Combine Wet and Dry Ingredients:

  1. Gradually add the dry mixture to the wet ingredients, stirring until a uniform dough forms.
  2. Fold in the shredded cheese until fully incorporated into the dough.

4. Shape the Biscuits:

  1. Line a baking sheet with parchment paper.
