Homemade Blackberry Cobbler Recipe:

Ingredients:

  • 4 cups fresh blackberries
  • 1/4 cup granulated erythritol (or sweetener of choice)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol (or sweetener of choice)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or milk of choice)
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish with butter or non-stick cooking spray.
  2. In a mixing bowl, gently toss the blackberries with 1/4 cup of granulated erythritol, lemon juice, and 1 teaspoon of vanilla extract. Spread the blackberry mixture evenly in the bottom of the prepared baking dish.
  3. In another mixing bowl, whisk together the almond flour, coconut flour, 1/4 cup of granulated erythritol, baking powder, and salt until well combined.
  4. In a separate bowl, beat the melted butter, eggs, almond milk, and 1 teaspoon of vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a thick batter forms.
  6. Spoon the batter over the blackberry mixture in the baking dish, spreading it out evenly.
  7. Bake in the preheated oven for 35-40 minutes, or until the cobbler topping is golden brown and the blackberries are bubbling.
